In Wisconsin, grilled beef and brats are huge favorites often served at cookouts. And if you are looking for a summer side dish, here is a grilled vegetable pasta salad featuring our beloved Wisconsin cheese. We recommend making this salad with bowtie, shells or rotini pasta, but use whatever pasta you prefer. Make it your own!

Summer Grilled Vegetable Pasta Salad

INGREDIENTS

2 teaspoons olive oil

2 garlic cloves, minced

1 medium red onion, halved lengthwise and sliced

1 medium yellow squash, cut into 1/4-inch lengthwise strips and 1-inch pieces

1 medium zucchini, cut into 1/4-inch lengthwise strips and 1-inch pieces

1 red bell pepper, cut into strips

1⁄2 cup Italian dressing, divided

1 cup packed arugula leaf, coarsely chopped

12 ounces of your favorite pasta (cooked, drained, rinsed and cooled)

1 1⁄4 cups Wisconsin Fontina cheese, cut into 1/4-inch cubes

1⁄4 cup Wisconsin Parmesan cheese, grated

1⁄2 teaspoon salt, to taste

1 teaspoon red pepper flakes, to taste

INSTRUCTIONS

Grease grill grate. Heat grill to medium.

Pour 1/4 cup dressing in a sealable plastic bag. Add garlic, onion, squash, zucchini, and red pepper; seal bag and toss to coat. Transfer vegetables to a lightly greased grill grid. Season with salt and pepper.

Place on a grill grate. Grill vegetables, covered, over medium heat for 8-12 minutes or until crisp-tender, turning occasionally.

In a large bowl, combine pasta, vegetables, arugula, the remaining Italian dressing, Fontina, Parmesan, salt, and red pepper flake. Toss well and serve.
